Aloo Jeera - Dry

The Aloo Jeera (Potato with Cumin seeds) is an easy-to-cook side-dish, good to have alongside any meal with gravy.

Servings - 2
Cooking Time - 8-10 minutes

Ingredients:

1. Potatoes - 3 medium-sized (Boiled, peeled, and cut into bite-size cubes)
2. Soya Oil - 1 tablespoon
3. Cumin Seeds - 1 teaspoon
4. Ginger - 1 tablespoon (Thin slices)
5. Green Chilli - 1 (Sliced lengthwise)
6. Coriander Seeds - 1 teaspoon (Crushed)
7. Turmeric Powder - 1/4 teaspoon
8. Mango Powder - 1 teaspoon (Optional)
9. Cilantro - 1 tablespoon
10. Salt - 1 teaspoon (Or, based on your salt intake)
11. Red Chilli Powder (Or, Paprika) - 2 teaspoons (Optional)

Cooking Procedure:

1. Heat the oil in a frying pan on low-heat for about 1-2 minutes. Add cumin seeds.
2. As soon as the cumin seeds begin to splutter, add the green chilli and ginger. Stir for about 30 seconds.
3. Increase heat to 'medium' and add the ground coriander, turmeric, red chilli, and mango powders. Stir for about 30 seconds.
4. Lower the heat to 'low-medium' and add the potatoes. Add salt. Stir for about 3 minutes, so that all the potato pieces are well-coated with the spices.
5. Lower the heat. Add the cilantro, stir for a few seconds. Let them stand for about 2 minutes.

Cauliflower and Potato Fry

This is a quick recipe for cooking a fry dish, which you can eat with Rice (along with lentils or other gravy items), or with Parantha, Naan or Rotis. You can also add peas or beans if you wish.

Servings - 3
Cooking Time - 25-30 minutes

Ingredients:

1.  Soya Oil - 3 tablespoons (You can use Canola Oil or Sunflower Oil as well)
2.  Cumin Seeds - 2 teaspoons
3. Red Onion - 1/2 (chopped)
4. Garlic - 3 cloves (minced)
5. Cauliflower - 1 head, cut into small florets with 1/2 inch stalk 
6. Potato - 2 medium sized (cut into cubes)
7. Red Chilli Powder - 1 teaspoon (You can use Paprika as well)
8. Turmeric Powder - 1 teaspoon
9. Salt - 1 1/2 teaspoons (Or, based on your salt intake)
10. Cilantro - 1/3 cup

Cooking Procedure:

1. Heat Oil in a pan over low heat. Add cumin seeds. As soon as they begin to pop, add the Onion and garlic. 
2. Stir the contents until the onion becomes a little brownish in color. Time Elapsed - 5 minutes
3. Put Off the stove. Add Cauliflower and Potatoes. Mix well, so that all the florets and the potato pieces are well coated with oil and the mixture.
4. Turn on the stove. While on low heat, add chilli powder, turmeric powder, and salt. Keep stirring well, so that all the florets and potatoes are coated. 
5. With the spatula, try to mash a potato piece. If it is too hard, add 1/2 cup water to the pan, and cover the pan, cook for 10 minutes.

6. If the potatoes are soft enough, turn the heat to medium, and cook for 2-3 minutes with constant stirring
7. Add the cilantro. Stir occasionally for another 2 minutes.
8. Serve Hot.
